After the olives were crushed in a stone mill, the resulting paste was placed in bags and pressed to extract oil. The first pressing produced the highest-quality oil, known as virgin oil. In the past, millstones and press bars were powered by slaves or animals. Since the 20th century, hydraulic presses have taken over the process.
